I got on a mac and tried my method :
I got Xmas working and Nemesis working.
Didn't get the remaster music or any other bugs fixed. Apparently, the Mac version is using the pre-beta version from the looks of it. It has the same bugs that I encountered when I first beta tested.
To get Nemesis working I...
First I copied everything in my PC Cave Story+\data folder into the Cave Story+.app\Contents\Resources\data folder
Next, I modified Cave Story+.app\Contents\Resources\data\Mods.txt
From this :
01 RG P10 /TimeTrial/mod/
02 RG P15 /boss/mod/
03 RI35 P05 /CurlyStory/mod/
04 RG P20 /Kaze/mod/
05 RA12 P25 /Nemesis/mod/
To this :
01 R+ P10 /TimeTrial/mod/
02 R+ P15 /boss/mod/
03 R+ P05 /CurlyStory/mod/
04 R+ P20 /Kaze/mod/
05 R+ P25 /Nemesis/mod/
NOW, all mods are unlocked; and Nemesis should be in the challenge section...
To add on Xmas seasonal mod, first you have to download the PC Steam version, then you have two choices :
1)
You can overwrite permantely the original files so Xmas is always on :
Copy the files from :
Cave Story+.app\Contents\Resources\data\Xmas\season
to :
Cave Story+.app\Contents\Resources\data\base
And that should do it.
2)
Alternatively, you can turn it into a mod :
Open
Cave Story+.app\Contents\Resources\data\Mods.txt
And add the last line :
01 R+ P10 /TimeTrial/mod/
02 R+ P15 /boss/mod/
03 R+ P05 /CurlyStory/mod/
04 R+ P20 /Kaze/mod/
05 R+ P25 /Nemesis/mod/
06 R+ P30 /Xmas/season/
Save~
Then, copy :
Cave Story+.app\Contents\Resources\data\CurlyStory\mod\mod.txt
To :
Cave Story+.app\Contents\Resources\data\Xmas\season

It's a very buggy Xmas!
And now, it should show up in the Challenges, in-game as a choice.
However, there are a few sprites that are still unchanged for Xmas : The portraits and misc items like chests.
To change those, find and backup :
Cave Story+.app\Contents\Resources\data\base\Face.bmp
and
Cave Story+.app\Contents\Resources\data\base\Npc\NpcSym.bmp
Then copy :
Cave Story+.app\Contents\Resources\data\Xmas\season\Face.bmp
and
Cave Story+.app\Contents\Resources\data\Xmas\season\Npc\NpcSym.bmp
And paste them in :
Cave Story+.app\Contents\Resources\data\base\Face.bmp
and
Cave Story+.app\Contents\Resources\data\base\Npc\NpcSym.bmp
NOW at long last, Xmas is semi-turn offable with just a click.
Be warned it automatically chooses the Normal difficulty, and it saves on Curly Story save slots. But, it should play properly.
