I don't know if there's a post similar to this, but my favorite enemy is the Chinfish.

Night Spirit

The Night Spirits (Bedsheet ghosts?) in the Outer Wall area, maybe just because it was so unexpected to see one.

The Gaudi series in general. Freaking awesome flesh-eating insect dudes. They needed a bigger role.

Night Spirits are a huge second. They're the most difficult of the normal enemies to handle.

Flying Gaudi are so hard to handle at 3 HP, mainly because their aim is always a bit off against a moving enemy, so you can't perfect dodge them. Take away the blade, and you have a potential boss fight there. Armour Gaudi are deadly in closed areas.
