Everyone says "Misery`s Cat". Why do you suspect it`s hers? If it were hers at least Jenka would care of her daughters cat and not leave it in the labyrinth. Why not somebodies cat from the labyrinth? Or an "alley cat" or more precisely a "labyrinth cat" ?

 

It's Misery's cat because no one in the Labyrinth possess the magic necessary to create such a creature, if that's the theory you subscribe to, and there is no one else outside of the Labyrinth with the magic necessary to teleport it into the Labyrith.
Jenka doesn't take care of it because she's obviously a dog person, and she doesn't like Misery much from the sound of it.
Although, I do not think that Misery possesses the craziness necessary to make a tankcat. That sounds like Crown Wearer work to me.

The island Core
Balloss can turn into a giant rock
Rabbit like creatures just like humans

Maybe just maybe thats enough to prove
that this guy (cat) did build a tank, Is a giant cat like creature.
And is capable of been a god damn hard boss

Well Cave Storys wierd
A big Cat comes and we assume it had to have been made big

 

Pixel the Cat is a cat. He takes up only one tile, he appears to be as intelligent as any of the dogs. Cave Story's fauna isn't all that strange, and it's pretty simple. I see no indication that this cat was not made big.

 

Monster X reminds me of old Sonic the Hedgehog robots. Kill the robot and... pop! Out comes a critter.

There are a lot of nods to other games in Cave Story... could be one of them?

Ame was a girl and she had all-white fur.

Is there anything worth the protection of a gigant cat in a gigant tank and that place? I mean, the Core is still miles away from the corridor where you fight Monster X. Ultimately, the entrance to Core is guarded by two Fuzzcores.
