I'm curious what happens if I use MP3.

Please stop embedding files/images from Discord. Discord has anti-hotlinking logic in place that breaks links to Discord hosted files and images when linked to from anywhere outside of Discord. There are a multitude of file/image hosting sites you can use instead.

Only with Mod Loader or CSE2 are you allowed to use these other sound formats: MP3, WAV, OGG, FLAC, XM, Pxtone.
If you wish to mod vanilla under its limitations, ORG is the only format you can use. However, there are means of adjusting the WAVE100 to custom waves and using WAV files for the drum instruments (requires a Python installation).
