HCl + NaOH = HOH + NaCl = saltwater.

No, not really, because while in practice you get saltwater, in reality you'd get something that would certainly make you feel sick (unless, of course you measured the volume of HCl and NaOH used extremely precisely).

What's better, knowledge or common sense?

knowledge, since I'm severely lacking in the other category. We did the NaOH and HCl experiment the other week and I had to stop myself from drinking the HCl.
